There they are treated using the traditional "double ageing" process, which takes place in decommissioned oak cognac barrels. This method, which dates back to the 18th and 19th centuries, is known to deeply refine the rums' aromas.<br><br>The Plantation Rum Trinidad 2016 begins its maturation with a five-year stay in bourbon barrels, which give it an impressive ester content of 85 g/hL. This is followed by one year of further refinement in FERRAND barrels before the rum receives its characteristic finish in mezcal casks, which it is given for a further year.
