<p>Plantation rums are no longer a mystery.<br><br>These high-quality rums come mainly from the Caribbean and South America before being brought to France for their final refinement.<br>In Ars, France, the rums are stored for several months in small, decommissioned oak cognac barrels, which is known as "double ageing" and was already practised in the 18th and 19th centuries.<br><br>The Plantation Rum Fiji 2011 Single Cask Marsala Finish is subject to a specific ageing process. For the first 7 years, it matures in bourbon barrels, resulting in an expressive ester content of 47 g/hL.<br>It is then aged for 4 years in FERRAND barrels to refine and balance its aromas.
