<p>Tement's Pinot Blanc Ton &amp; Mergel Südsteiermark DAC 2025 is a refined expression of Austrian white winemaking, showcasing just how versatile this grape variety can be when grown with care. The fruit is sourced from biodynamically farmed vineyards at the well-known Tement estate, planted on the region's characteristic clay and marl soils that give the wine its sense of structure, depth and unmistakable sense of place.</p><p>The vines used for this cuvée range from 17 to 52 years old, contributing concentrated, characterful fruit. After fermenting spontaneously with wild yeasts, the wine is aged slowly on its fine lees, partly in stainless steel and partly in large wooden casks, a process that builds elegance, balance and a silky texture.</p><p>The result is a harmonious, highly drinkable white wine that works beautifully alongside a wide range of dishes. At 12% ABV, this South Styrian Pinot Blanc also shows real ageing potential, with an ideal drinking window expected between 2026 and 2033.</p><p><strong>Tasting Note</strong></p><p>Pale yellow in the glass with shimmering highlights. The nose offers delicate notes of yellow apple and white currant, joined by a subtle touch of exotic fruit. On the palate, the wine is juicy and precise, carried by lively acidity and a gentle minerality that lend it a wonderfully harmonious mouthfeel. The finish is fresh, elegant and pleasantly persistent. Measured acidity sits at 5.5 g/l, with residual sugar at 2.1 g/l.</p><p>This Pinot Blanc is a flexible food partner, pairing especially well with classic fried chicken, and also complementing poultry, fish, vegetable dishes and lighter Austrian fare. Serving between 8–10°C best highlights its minerality, freshness and elegant structure.</p>
