Description

Edradour, recognised as Scotland's smallest traditional distillery since its foundation around 1825, operates largely using 19th century methods. A unique preservation of the old farmhouse distilling style, Edradour produces 12 casks of whisky a week. Owned by Andrew Symington, the founder of Signatory, since 2002, Edradour has expanded its range to include new bottlings, including the peaty malts under the Ballechin name.

Signatory founder Andrew Symington works closely with the South Tyrolean winery St. Michael-Eppan, which has resulted in a fascinating series of single cask bottlings from red wine casks. In this particular case, a distinctive Cabernet Sauvignon was used for the pre-fining, giving the whisky unique flavours and character traits.

This collaboration between Signatory and St Michael-Eppan is an impressive demonstration of how innovative partnerships and careful cask selection can create exceptional whiskies full of character.
