<p>Bozal Sacrificio Borrego Mezcal Artesanal is produced in small batches according to ancient traditions, combining the powerful aromas of wild agave varieties with the deeply rooted rituals of the mezcaleros from Oaxaca, Guerrero, and Durango. On the steep, inaccessible slopes of these regions, various wild agave species thrive, developing a unique intensity in their natural environment. Their aromatic profile is characterized by earthy notes, spicy smokiness, and the natural power typical of traditional mezcals from these areas. This edition primarily uses Espadín – the original genetic form of the Blue Weber agave – and Barril, a wild-growing variety of the Karwinskii family. The Espadín agave requires seven to nine years to mature, while the Barril agave takes nine to twelve years and is distinguished by its striking citrus and floral character.<br><br>This mezcal is produced using the rare and ceremonial Sacrificio method. The agave is first cooked in earthen pit ovens, then crushed with a stone tahona, fermented in open air, and subsequently double-distilled. During the second distillation, a leg of lamb, along with seasonal fruits such as strawberries, apples, and pineapple, as well as pecans and ginger, are traditionally suspended in a basket inside the still – a practice reserved for special occasions. This method imparts the mezcal with its characteristic spicy and meaty undertone, which blends harmoniously with the fruity, mineral, and nutty aromas. The rustic, brown ceramic bottle is reminiscent of traditional terracotta copitas and underscores the artisanal origin of this mezcal artisanal.</p>
