The Huntress Lemon Meadow 2025 is part of the annual Huntress editions that reflect the distillery's love of experimentation. This bottling combines fresh, floral aromas with a vibrant citrus note from natural fermentation and carefully selected cask maturation. The organic barley used comes from Scotland and is processed particularly gently to preserve the characteristic, light aromas.
The multi-layered maturation is particularly noteworthy: 56% of the whisky is matured in STR red wine casks (Shaved, Toasted, Re-charred), 42% in former American whiskey casks and 2% in Oloroso sherry casks. This balanced combination of casks gives the whisky a complex structure with fruity, vanilla and nutty accents.
