<p>Edradour Distillery, whose history is as multifaceted as its range, was once even owned by the New York Mafia. Today, it is run by Andrew Symington, the founder of Signatory Vintage. As an independent Highland distillery, it relies on traditional production methods and uses 19th-century equipment to create handcrafted premium single malts. Its diverse portfolio includes whiskies with exceptional cask finishes as well as bottlings made from malt with a peat level of at least 50 ppm.<br><br>The new batch of Ballechin 18 Years Old has been enriched by combining bourbon and sherry casks, adding further complexity to the maturation process. This extended maturation allows for a successful fusion of intense peat smoke and spicy wood notes, defining the character of this Highland single malt. These casks impart a balanced structure to the whisky, harmonizing the smoky, woody, and fruity elements without overemphasizing any single nuance.</p>
