<p>Saint James brand rums come from the renowned "Saint James" distillery in Sainte-Marie on the Caribbean island of Martinique and are made from fresh sugar cane juice, which is fermented in a complex fermentation process. A large proportion of the sugar cane required for this is grown directly on the company's own plantations, which ensures high quality and control over the entire production process.<br><br>During fermentation, which lasts 24 to 36 hours, all the sugar is converted into alcohol before distillation takes place. The result is a cane rum with an impressive alcohol content of 75% vol. which initially rests for six months in stainless steel tanks. This resting phase allows excess carbon dioxide and unwanted off-flavors to escape, allowing the rum to gradually develop a harmonious aroma and a pleasant taste.<br><br>This initial maturation is followed by at least two years of ageing in oak barrels, which gives the Saint James rum its characteristic depth and mature, woody notes.
