<p>Mezcal Local is a Pechuga de Maguey - it is distilled with agave hearts ( <i>"con Corazón de Agave"</i> ) and various fruits. It is made from 100% agave espadin, harvested after 10 years. The bottles are made of environmentally friendly, recycled glass.</p><h4>Aroma and taste</h4><ul><li>Mild in aroma and taste</li><li>Very fruity, voluminous, homogeneous</li><li>Long-lasting finish</li></ul><h4>Production of Mezcal Local</h4><p>Leonel Hernández (Don Gil), a third generation maestro mezcalero, makes his mezcal in San Pablo Villa de Mitla.<br>The agaves are cooked underground for 3 days, ground with an Egyptian mill and then fermented in wooden vats for 10 days. During the distillation process, agave hearts and a selection of fruits&nbsp; <strong>(apple, peach, banana and orange)</strong> are &nbsp;added to the still. The agave heart acts as a natural purifier and the fruits add a wide range of distinctive flavors to the still. This mezcal is distilled twice in copper and then bottled.</p><h3>Why does the bottle label say "Destilado con Corazón de Agave"?&nbsp;</h3><p>Due to the new regulations of the CRM (=Consejo Regulador del Mezcal/official Mexican authority for Mezcal) for labels, all producers of Pechuga Mezcals are now obliged&nbsp; to write <strong>"Destilado con - Corazon de Agave”</strong> &nbsp;on the label of a Mezcal de Pechuga, as in the case of Mezcal Local.&nbsp;</p><ul><li><strong>100% Espadin agaves</strong></li><li><strong>Agave age: 10 years</strong></li><li><strong>Traditional production using the "Pechuga" method</strong></li><li><strong>Vegan Pechuga Mezcal (distillation with apple, peach, banana and orange)</strong></li><li><strong>Mild in aroma and taste.
