<p>Amatiteña, inspired by the long tradition of agave cultivation in Amatitán since the 18th century, is produced by engineer Alberto Partida Hermosillo, a third generation master tequilero of the Partida family. The brand honors the ancestral customs of Jalisco and the agave fields by maintaining traditional methods in its production.<br><br>For example, after being carefully harvested, the agave hearts are crushed using a tahona, a large stone wheel, and then slowly cooked over an open fire and wood. This elaborate process not only preserves the aromas, but also intensifies them. In addition, fermentation takes place with wild yeasts, which contributes to a unique flavor profile that reflects the essence of the region.<br><br>Finally, distillation is carried out in traditional copper stills to preserve the characteristic aromas of the agave and create an unmistakable, authentic tequila experience. Through these methods, Amatiteña remains true to the heritage and craftsmanship that has been passed down through the Partida family for generations.</p>
