<p>Edradour, recognized as Scotland's smallest traditional distillery since its founding around 1825, operates largely using 19th-century methods. A unique preserve of the old farmhouse distillery style, Edradour produces 12 casks of whisky per week. Owned since 2002 by Andrew Symington, the founder of Signatory, Edradour has expanded its range with new bottlings, including peated malts under the Ballechin name.<br><br>Signatory founder Andrew Symington works closely with the South Tyrolean winery St. Michael-Eppan, resulting in a fascinating series of single cask bottlings matured in red wine casks. In this particular case, a distinctive Merlot was used for the previous fill, giving the whisky unique aromas and character.<br><br>This collaboration between Signatory and St. Michael-Eppan impressively demonstrates how innovative partnerships and careful cask selection can create exceptional and characterful whiskies.</p>
