<p>Lokita Mezcales are artisanal. The agave is cooked in stone-covered pits, crushed with the Tahona and distilled in small batches in alembics.&nbsp;</p><p>At Lokita we use Espadin and other types of agave to create a wide range of natural, delicious and high quality mezcales. Lokita mezcales are fermented with endemic local yeasts. The fermentation tanks are made of pine wood.&nbsp;</p><p>Our Mezcalero Maestro, Arturo Martinez, carefully monitors the process, regularly listening, smelling, touching and tasting the fermenting mash. We use copper stills for double distillation.</p><p>Elaborated with Maguey Tepeztate (Agave Marmorata).&nbsp;</p><p>It is distilled twice in copper stills and aged for 20 years.</p><h2>Tasting notes</h2><p><strong>Appearance</strong></p><p>Clean, crystalline, full-bodied.</p><p><strong>Nose</strong></p><p>Predominantly fibrous, spicy and ashy to the nose. Cooked agave is well assembled with apple and apricot notes, followed by cinnamon, pepper and cloves aromas.</p><p><strong>Palate</strong></p><p>The taste is honest, predominantly spicy, fibrous and earthy. Sweet notes are well-balanced with herbal and spicy flavors.</p><p><strong>Finish</strong></p><p>Its medium bouquet, great body and characteristic aftertaste remembers us its fibrous, earthy origins.</p>
