<p>Lokita Mezcales are artisanal. The agave is cooked in stone-covered pits, crushed with the Tahona and distilled in small batches in alembics.&nbsp;</p><p>At Lokita we use Espadin and other types of agave to create a wide range of natural, delicious and high quality mezcales.&nbsp;</p><p>Lokita mezcales are fermented with endemic local yeasts. The fermentation tanks are made of pine wood.&nbsp;</p><p>Our Mezcalero Maestro, Arturo Martinez, carefully monitors the process, regularly listening, smelling, touching and tasting the fermenting mash. We use copper stills for double distillation.&nbsp;</p><p>Elaborated with Maguey Tobala (Agave Potatorum Zucc).&nbsp;</p><p>It is distilled twice in copper stills and aged for 12 years.</p><h4>Tasting notes</h4><p><strong>Appareance</strong></p><p>Clean, crystalline, fullbodied.</p><p><strong>Nose</strong></p><p>Fruity to the nose. Pineapple and apple notes with a touch of herbal and fresh aromas (citrus and cucumber seeds). Ending with a touch of ash and cloves notes.</p><p><strong>Palate</strong></p><p>The attack is frank to the palate, rounded, full-bodied. A complex assemblage of citric and spicy flavors.</p><p><strong>Finish</strong></p><p>An intense and smoky aftertaste reveals the sweetness of ripe agave.</p>
