<p>Mombacho 21 Year Old Port Finish has aged for at least 21 years in ex-bourbon barrels (burned oak barrels that previously contained bourbon) before being refined in port barrels.</p><h3>Tasting note</h3><p>The nose shows a mature but rather light rum, with a waxy veil, between polish and honey. The toasted wood has retained youth and freshness in its fibers, so it is a white and raw wood which is restored in the liquid. Very quickly, a wave of red and black fruit jam covers the surface, with prune and black cherry at the top.</p><p>With aeration, we discover a whole new aroma that had not been shown at all until then: smoke. We think of braised chicken, even smoked, in hot ashes, in charcoal. This smoke has penetrated every part of the rum, so we end up with more complex aromas, as if more cooked.</p><p>The palate is quite loaded with aromas, as each attracts attention in its own way. On the one hand, the wood grips the attack with its tannins and those of the prune. Then the fruit jam is seasoned with colorful spices such as saffron, curry, caraway. Finally, our famous smoky notes come back and combine with the molasses brandy to bring an almost tarry side.</p><p>The finish is interesting, both resinous, toasted and delicious, like grilled pine thorns.</p>
