<p>The first traces of Château de Peyrepertuse date back to 806, a legacy of the Cathars who built the citadels of vertigo that still dominate the vineyards today. The Corbières offer an extraordinary geological diversity of schist, limestone and rolled pebbles.</p><p><strong>Vinification and ageing.</strong><br>All grapes are hand-picked. Carbonic maceration lasts from 10 to 18 days for Syrah, and a traditional traditional maceration with total destemming is carried out for Grenache and Mourvèdre. After malolactic fermentation, the different grape varieties are blended and the wine is aged in 225-liter Bordeaux barrels for approximately 8 months.
