<p>The name Chatelier is a tribute to the most distant origins of cognac. The first eau-de-vie of cognac were created on the west coast of its vineyards, historically it was local monks who developed the art of distillation.</p><p>In 1166, one of the oldest Cistercian monasteries was founded in the heart of the island, the Île de Ré. Its name: l'Abbaye des Chateliers.<br>This unique place was for a long time the epicentre of the distillation of local wines by these learned monks.<br>This is also how Alexandre Gabriel created Claude Chatelier Cognac in 1989.<br><br>Claude Chatelier cognacs are distilled in small copper pots of 25 hectolitres according to ancient, traditional in-house methods.<br>The cognac matures slowly in small French oak barrels in cool, damp cellars with beaten soil that promotes its subtle transformation. The time-honoured mixing art of the cellar master gives this cognac its excellent balance.<br><br>The Claude Chatelier XO Extra is aged for over 20 years in limousine oak barrels.</p><p><strong>Eye:&nbsp;</strong></p><p>Deep mahogany hue, with a balanced amber tone.</p><p><strong>Nose:&nbsp;</strong></p><p>Favourable oak on the nose, beautifully balanced with aromas of vanilla and dried flowers.</p><p><strong>Palate:&nbsp;</strong></p><p>Harmonious with initial notes of plum and candied fruit. Begins to open up to hazelnut and fig flavour. Towards the end Rancio subtly appears accompanied with keys of leather and tobacco. A delectable lingering is left.</p>
