<p>Produced by the Dominican Republic company Oliver y Oliver, Opthimus 25 Year Old Port Finish is column distilled from sugar-rich molasses and then aged in bourbon casks for 25 years using the solera method. The rum is then decanted into casks that have previously contained Single Malt Whisky for a few more months of ageing.</p><h3>Tasting notes</h3><p>The first nose immediately offers a certain complexity, certainly due to the contribution of the whisky barrel. To dress up this round rum that revolves around nuts, caramel and vanilla, there are fine notes of leather, toasted wood and a touch of sulphur. Time continues to reveal a nice concentration of white and fatty nuts, soft wood with vanilla, coconut and tobacco aromas.</p><p>On the palate, the rum immediately moves towards a greedy woodiness. The texture is round and the oak seems soaked in cane syrup. Its fibres melt into shreds of caramel and vanilla. Everything is organised around the wood, whether it's coconut and liquorice, or even the cherry pit.</p><p>The finish is also woody and caramelised, always with a sweet sensation.</p><p><i>"After a charming nose with a certain character, the palate displays a great woody roundness...".</i></p><p>This special bottling is&nbsp;strictly limited to&nbsp;only 1300 bottles.</p>
