The distillery pursues a modern approach to whisky production and specifically uses the influence of different yeast strains to open up new aromatic dimensions.&nbsp;</p><p>This bottling is part of the experimental NOIR trilogy, a series of Lowlands single malt Scotch whiskies in which French wine yeasts are deliberately combined with Scottish barley malt. The Burgundy Yeast Single Malt uses a wine yeast from the renowned Burgundy region, which is usually used in the production of high-quality Burgundy wines.&nbsp;</p><p>This special yeast already produces fruity, slightly savory and complex notes during fermentation and thus significantly shapes the subsequent aroma profile of the whisky.<br><br>After distillation, the whisky is matured in a combination of ex-bourbon casks and burgundy barriques, resulting in a multi-layered interplay of sweet, fruity and spicy aromas.
