<p>Our Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside.</p><p>We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging.</p><p>These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.</p><h2>Tasting Notes</h2><p><strong>The nose</strong><br>Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.<br><br><strong>The taste.</strong><br>Sweet and smooth, with butterscotch, honey and peppercorn, dried fruit, maraschino cherries and brown sugar.<br><br><strong>The finish.</strong><br>Ginger spices a touch of almond and earthiness.</p>
